  • Pecan Tarts

We all love tarts. But let’s be honest, even if you are not a vegan, the real tart recipes are way too full with calories. And in the summer a tart full with butter and milk might be way too much for anyone. Rather than being in the kitchen around the heat you can just try to make a no bake tart. I love pecans so a no bake pecan tart is the perfect solution. First of all doesn’t take too much time – about 30 minutes. And then it is delicious, but being healthy and non-caloric.

Here is what you need:

For the crust:

½ cup raw pecan halves
¼ cup raw almonds
½ cup shredded coconut
1 tbsp coconut sugar
1 tbsp coconut oil

For the filling:
10 dates
2 tbsp coconut oil
½ cup coconut milk

For the top layer:
½ cup dark chocolate chips
1 tbsp coconut oil
1 cup pecan halves

Here is what you should do:

Put all the crust ingredients in a blender and mix them until you have a smooth mixture. Then split the mixture into tart pans. It will be better if they are smaller. Then mix the ingredients for the filling. It would be easier if you did it with a blender, so try that. This mixture should be as smooth as possible. Add the second mixture into the tart pan over the crust. In a bowl or pan, melt the chocolate chips and the coconut oil together. They should be mixed perfected. Pour the chocolate on top of the tarts. Then add the pecan halves on top. Place them beautifully.

In order for you to be able to eat them tart you need to cool them in the freezer for 30 minutes. Then take them out and put them on a plate. You can add a scoop of ice cream – the perfect summer dessert.

  • Chocolate hummus

If you love hummus, there is no way you never thought about how can chocolate hummus be created. Well, you don’t have to worry about that anymore – there is chocolate hummus and you can make it at home easily and peacefully. And if I have to be honest, it is one of the most delicious things I have eaten. It is mild and sweet yet not too much. With some nuts added it is the perfect desert.

Here is what you need:

¼ cup almonds
4 pitted dates
420g can of chickpeas (rinse and dry them)
2 tbsp maple syrup
1 tsp vanilla extract
¼ tsp cinnamon
½ cup vanilla soy milk

Here is what you should do:

Start with the almonds. Put them in a food processor. Leave them there for 5-6 minutes. This will smooth them and make an almond butter. Then add all of the other ingredients. Process them too, until smooth.

The good thing about this dessert is that it can be eaten immediately. You can top it up with some fruits. Probably the best option is to add raspberries or peaches. They just add up to the creaminess and sweetness of the chocolate hummus. Eat whatever you are going to eat and then store the rest in an airtight container or bag in the fridge. When you decide to eat it, just take out, let it breathe for 5-10 minutes, add the fruit and enjoy!

  • Chocolate peanut butter, avocado pudding

If you are not sold even only by reading the name of the dessert I don’t know how you live. I love this one, because it is a strange combination, that works so well that I can’t believe it. It is at the same time rich and sweet and chocolatey, but being healthy at the same time.

Here is what you need:
1 ½ ripe avocados
1 ripe banana
½ cup unsweetened cocoa
½ cup salted creamy or crunchy (it is up to you what you like) peanut butter
¼ cup almond milk
Coconut whipped cream with which you will top the pudding

Here is what you should do:

Start by mixing all the ingredients (without the whipped cream) and put them into a blender. Blend them until everything is smooth and creamy. Not that a crunch or two will ruin the taste, but it will all be better if the cream is smooth.

In order to make your dessert delicious and beautiful you should put it into beautiful glass cups. So grab 6 cups good for serving. Than add the smooth mixture into them. Right before you serve any of the 6 cups top it up with the delicious coconut whipped cream. And then just enjoy!

The good thing about that dessert is that it can be kept in the fridge for up to 5-6 days. Of course its taste is better when it is fresh, but you can just add a fruit to it and it will be as fresh as possible. Easy, fast and enjoyable.
