There are a lot of ingredients a person does not use when they are cooking either because they think the ingredients will be too difficult to cook, or because they think they do not like the taste of it. And often these people are wrong because they have not tried recipes which are very easy to do and at the same time they can be cooked so well that they taste marvelous.
Today we have prepared for you a couple of recipes with an ingredients which is not everyone’s favorite – eggplant. But once you try these recipes, you will definitely fall in love with the taste of it. So, check out these a bit unusual eggplant recipes!
#1 Eggplant burger
30 ounces of chickpeas
3 cloves of garlic
2 tablespoons of tahini
lemon juice from 1 lemon
2/4 cup of olive oil
1 teaspoon of paprika
½ teaspoon of garlic powder
½ teaspoon of red pepper flakes
½ teaspoon of black pepper
½ teaspoon of salt and some more to taste
vegetables to taste, like green salad, 1 tomato, and ½ onion
The first thing you need to do is to prepare the sauce for the burgers. You will need some blender to make it. Put in the blender the chickpeas, add the garlic cloves, the tahini, and the lemon juice from 1 lemon.
Then season the ingredients with some salt to taste. Lastly, add ¼ cup of olive oil into the blender. Blend the mixture until it is turned into a homogeneous one. When it is ready, you can pour it in some bowl and leave it aside for now.
Now you need to get the eggplant and to cut the front piece of it, where the stable was. Then cut in into 4-5 big pieces which can be about 1.5 cm thick, it depends on the size of the eggplant.
Then you need to sprinkle some salt on each side of the eggplants. In 20 minutes it will absorb the salt and let some of the water it contains on the surface of it. Then using some cooking paper, you can absorb the extra water from the eggplant pieces.
Now you need to get a bowl in which you need to pour the other ¼ cup of olive oil. Add also the paprika, the red pepper flakes, the garlic powder, the black pepper, and the ½ teaspoon of salt.
Mix these ingredients well until the salt dissolves into the mixture. After that, using a cooking brush, apply the mixture on both sides of each eggplant piece. Make sure you spread it evenly.
The next thing you need to do is to grill the eggplant pieces on each side until it turns dark brownish. You can also cut the buns in halves and grill them a little as well.
Once all the eggplants are grilled, you need to make the burgers. Add whatever vegetables you like in the buns, like green salads, tomatoes, and onions. Then put a piece of grilled eggplant on top of the vegetables, spread some of the chickpeas sauce and you can put another grilled piece of eggplant on top of the sauce. Put the top of the bun on it to finish making the burger.
And voila, your burger eggplants are ready! You can serve them with some French fries as a side dish.
#2 Eggplant pizza
3 cups of marinara sauce
1 ½ cups of mozzarella
½ cup of parmesan
1 cup of cheddar
¼ of chopped basil
1 teaspoon of garlic powder
1 teaspoon of black pepper
½ teaspoon of red pepper flakes
½ teaspoon of salt
First you need to cut the front and the last piece of the eggplant and to throw them away. Then cut the rest of the eggplant into pieces which need to be about 1.5 cm wide.
Then, as in the first recipe, you need to sprinkle some salt on each side of the eggplant pieces to let the water show on the surface. In 20 minutes you can get some cooking paper and absorb the extra moisture with it.
The next thing you need to do is to put the eggplant pieces on a baking tin and, using a cooking brush, to apply some olive oil on each one of them. Then put the tin in the oven and bake the eggplant pieces for 20-25 minutes at 1750 C. Meanwhile you can prepare the sauce for the eggplant pizza.
You will need a big bowl. Pour in it the marinara sauce, half cup of parmesan, the chopped basil, the garlic powder, the red pepper flakes and season them with the black pepper and the salt. Mix all the ingredients in the bowl well until season evenly.
When the eggplant pieces are baked, take the tin out of the oven and apply on each eggplant piece a spoonful or so of the sauce – the amount of sauce depends on the size of the piece.
Then sprinkle some mozzarella on each one of the pieces, and after that sprinkle the cheddar cheese on top of the mozzarella. Spread the cheese evenly on the pieces.
Put the tin back in the oven, at 1750 C, for a couple of minutes to make the cheese melt. And after that the eggplant pizza will be ready. Enjoy it!
