When winter comes there is nothing better than sitting in front of the fireplace with a cup of hot beverage, or maybe wine if you prefer, cuddling with your partner. Well, in order for the picture to be perfect we have to add one more thing, and I am sure you will agree. You will also need something sweet and homemade, like cookies. The picture would be perfect if the cookies are chocolate crisp ones. We have some good news for you – that is exactly what today’s recipe is going to be about – winter homemade chocolate crisp cookies.
Winter homemade cookies
1 cup of butter
1 ½ cups of sugar
1 teaspoon of vanilla
8 tablespoons of Irish cream
2 2/3 cups of white flour
½ cup of cocoa powder
1 teaspoon of instant coffee powder
1 ¼ teaspoons of baking soda
¼ teaspoon of salt
½ cup of milk chocolate chips
1 cup of white chocolate chips (if you prefer dark chocolate, you can use it instead of the white chocolate chips. You only need to make sure it is the same quantity)
Get a container which is big enough to put all the ingredients in and to mix them well. Then put the butter in it and mix it with the sugar, eggs, and the vanilla extract. It is best if you use a mixer, because a fork cannot do the mixing that well. You need to mix it a couple of minutes until you are sure that the ingredients have turned into a nice homogeneous mixture.
When you are finish mixing them, add the Irish cream, and again use the mixer to mix them together.
When this mixture is ready, add the flour, the cocoa powder, the coffee powder, the baking soda, and the salt. Mix everything together well. You will notice that your mixture is ready when it has turned dark brown because of the cocoa powder and the coffee powder. It should be also quite thick and yummy looking.
However, the mixture is not ready yet, because you need to add the chocolate chips. Mix everything well again, but this time you can use an ordinary spoon, or some other tool, but the mixture would be too thick for the mixer.
Cover the mixture with some foil and put it in the fridge for 4-6 hours. You can just leave it overnight if you do not have time to wait for it.
When you get it out of the fridge, the mixture would be thick enough to make small balls of the mixture. They should not be bigger than the middle part of your palm. Just grab a small piece of the mixture and roll it into a ball. Do this until the whole mixture is turned into small balls.
Get a large baking tin and cover it with baking paper. Then put the balls in it, but you need to make sure there is at least 4-5 centimeters between the balls, because while baking the balls will spread around and they should not melt together.
Turn the oven to 350 0F/176 0C and bake the balls for 10 minutes. When you get the tin out of the oven, you will see that the balls have become flat, just like cookies. You can leave them somewhere to cool down a little first. And then remove them from the baking paper.
And voila, your winter homemade chocolate chips cookies are ready. All you need to do is to enjoy them. Bon appetit!
