#1 Pumpkin Pie Bites
15 ounces of pumpkin puree
12 ounces of evaporated milk
2 pie crusts
¾ cup of sugar
1 teaspoon of cinnamon
¼ teaspoon of cloves
½ teaspoon of ginger
½ teaspoon of salt
First you need to get a bowl and to pour in it the sugar. Then add the cinnamon and the cloves, after that the ginger, which needs to be powder, and finally the salt. Mix these ingredients well together until they become a homogeneous mixture.
When this is ready add the two eggs into the mixture and then the pumpkin puree. Whisk the mixture well again until it turns into a homogeneous orange one.
Now by continuing stirring the mixture, get the evaporated milk and gradually add it into the bowl with the rest of the ingredients. Do not stop whisking until the whole milk is added.
Now you need to get the pie crusts and to lay them on the table. Get a cup which needs to be a relatively big one and use it to make perfectly round pieces of the pie crust you will later use for the base of the bites. You will need 12 round pieces of pie crust.
When the bites crust is ready, get a muffin baking tin with 12 shapes. Put each one of the 12 round pie crusts in the 12 shapes of the baking tin and make sure they touch the bottom of the tin. Then using a fork make small holes on the bottom of each one of the 12 pie crusts.
When this is ready, fill the 12 baking forms with the pumpkin mixture you created before that. Put the baking tin in the oven and bake the pie bites for 20-30 minutes at 1800 C. When they are ready, take them out of the oven.
You can serve the pumpkin pie bites with some cream on top and with some cinnamon sprinkled on top of the cream. And voila, they are ready!
#2 Pumpkin Donut Rolls
1 and ¼ cups of pumpkin puree
2 tablespoons of melted butter
2 cups of flour
¾ cup of sugar
2 teaspoons of baking powder
2 teaspoons of pumpkin pie spice
1 teaspoon of salt
¾ cup of extra sugar
3 tablespoons extra pumpkin spice
First you need to get a bowl and to put in it the cups of flour. Then add the ¾ cup of sugar, the baking powder, 2 tablespoons of pumpkin pie spice, and the teaspoon of salt. Whisk them all well until they turn into a homogeneous mixture.
Get a clean bowl and put in it the pumpkin puree. Mix it with the egg and with the melted butter well until it turns into a mixture. Then get the flour mixture you made in step 1 and add it into the bowl with the pumpkin puree. Mix them really well until it all turns into a light orange dough.
When the dough is ready, you need to take a piece of it, about a handful big, and to roll it into a ball. Do the same with the rest of the dough. Then deep fry the balls in already heated oil.
Fry them for a few minutes until the balls turn brown. When the balls are ready, take them out of the boiling oil and put them on some cooking paper which will absorb some of the oil.
Now get the extra amount of sugar and pour it into a bowl. Add the three extra tablespoons of pumpkin spice into the bowl and mix the two ingredients well together.
When this mixture is ready, get a pumpkin dough ball and roll it into the sugar-pumpkin spice mixture. Do the same with the rest of the balls. And voila, the dessert is done! Enjoy it!
