Summer is a season when people want and tend to lose weight. This is because they tend to eat lighter meals because of the heats. The hotter the weather is, the less appetite people have. At this time of the year salads are favored a lot since they are light, delicious, and most importantly healthy. A person could easily satisfy their hunger with a bowl of delicious and fresh salad.
And since we also love salads and international cuisine, we decided to show you a Mediterranean salad recipe to try in the summer. Mediterranean cuisine is liked by a lot of people around the world and it is famous for containing olive oil and olives since the region is known for the production of olives.
Apart from that this salad will give you this taste and feeling of the Mediterranean countries and will make your summer fresher and a bit more delicious. So, here it is the recipe!
#1 Healthy Mediterranean Salad
1 chicken breast
½ cup of olives
½ cup of red onion
½ cup of cherry tomatoes
½ cup of feta cheese
1/3 cup of Greek yogurt
2 tablespoons of water
3 garlic cloves
1 tablespoon of red wine vinegar
3 tablespoons of olive oil
2 tablespoons of lemon juice
2 tablespoons of dill
salt to taste
black pepper to taste
First you need to prepared the chicken breast for the salad. Get a small baking tin and line it with aluminum foil. Then put the chicken breast on top. Apply a tablespoon of olive oil on it and then add a tablespoon of lemon juice.
Get two garlic cloves and chop it thinly. Then sprinkle the garlic on top of the chicken.
Then sprinkle one tablespoon of dill on top of it as well. It is better to chop the dill beforehand thinly as well. Then season the chicken with some salt and black pepper.
Next you need to bake the chicken at 2000 C for 35-40 minutes. While you are waiting for the chicken to get ready, you can move on to preparing the other part of the salad.
Get a bowl and put in it the Greek yogurt. Then add the other 2 tablespoons of olive oil. Then add the tablespoon of red wine vinegar and the other tablespoon of lemon juice. After that add the tablespoons of water and the last garlic clove which also needs to be chopped. Then season the mixture with the other tablespoon of dill and salt and pepper to your taste. Mix all the ingredients well.
Then you need to wash the lettuce, the cucumber, and the cherry tomatoes. Tear the lettuce into pieces. Then dice the cucumber, or cut it into crescent pieces and cut the cherry tomatoes in halves. You can leave the cherry tomatoes whole if you prefer. This way the salad will have a more authentic touch to it. Then cut the red onion into crescent pieces as well.
When the chicken is finally baked, you need to take it out of the oven and cut it into horizontal pieces. Then get a big bowl and put the lettuce pieces in it. Add the chicken pieces, then the cherry tomatoes, the cucumbers and the onions. After that add the olives which you can also cut into halves and remove the stones, or leave them whole.
Next you need to add the feta cheese into the bowl with the rest of the ingredients. Last, add the yogurt dressing on top of the ingredients. Mix everything well and carefully and then the salad will be ready to be served. You can have it both for dinner or lunch without leaving you hungry.
