There are a lot of people who think they do not like the taste of eggplants, but they probably have not tried some good recipes with this vegetable. In fact, eggplants are healthy and could be very delicious if they are cooked properly.

#1 Eggplant Bake
The first recipe in our list is the eggplant bake which is very delicious and it is perfect for people on a diet, or people who do not eat meat.
10 pieces of mozzarella
a handful of feta cheese
a couple of pinches of thyme
4 tablespoons of olive oil
salt to taste
pepper to taste
First you need to wash the eggplant, just in case. Then without cutting the top part of it, cut it into 6 vertical pieces. Basically, you need to create something like a fan from the eggplant. This will be the main part of your bake.
Then you need to wash the tomatoes and to cut them into vertical pieces as well. Make them as big as the standard mozzarella pieces. And after that you need to put a piece of tomato and a piece of mozzarella between each one of the eggplant pieces.
Then you need to put one more piece of mozzarella and tomato there as well, so you will need about 10 pieces of mozzarella and 10 pieces of tomatoes.
Once this is ready you need to put the eggplant in a baking tin. You can line it with baking paper beforehand so it does not stick on it. Then sprinkle the feta cheese on top on the eggplant fan and make sure you do it evenly. And then you need to season the eggplant with thyme and add salt and pepper to your taste.
Finally, you need to pour the 4 teaspoons of olive oil on top of the eggplant and make sure you do it evenly as well. And you are almost ready. You only need to bake it for 15 minutes at 220 0C. Once the eggplant bake is ready, you can serve it.
#2 Eggplant Bites for Starters
The next recipe is a perfect one for starters and it is suitable for vegetarians as well. Here is how you need to prepare it.
5-6 leafs of fresh basil
1 cup of mozzarella
15 ounces of ricotta
½ cup of parmesan
salt to taste
For the breading:
flour, eggs, and breading
First you need to wash the eggplant and to cut it into round pieces. Then put all the piece on top of some kitchen napkin and season then with some salt. Let them stay this way for half an hour. This way some of the water from the eggplant will pop to the surface and you will be able to dab it with some paper napkin.
Then you need to chop the basil leafs. Get a bowl and mix in it the mozzarella, the ricotta, and the parmesan. They need to be either grated or chopped before you mix them together.
Then get the egg and whisk it until the yolk and the egg white mix perfectly. Add it into the bowl with the cheeses. Then add the chopped basil. Mix everything together.
Once the mixture is ready you need to get two pieces of eggplant which are similar in size, and to apply a spoonful of the mixture between them as if you are making some sandwiches.
Do the same with the rest of the eggplant pieces and the cheese mixture. And when this is ready, let the eggplant sandwiches freeze for one hour.
Once the hour is up, get the eggplant bites from the freezer and roll them in the ingredients for the breading. First roll them into the flour, then into the whisked egg, then into the breading, and then into the egg and the breading once again.
Deep-fry the bites by heating some cooking oil beforehand. Fry them until they turn golden-brownish. It will take not more than 4-5 minutes to do so. And after that you can serve them garnished with some marinara sauce.
