Brunch Recipes to Try This Weekend

There are some people who say that breakfast is the most important meal of the day and that no matter what you do you need to have breakfast in order to have the strength to go through the day. There are some people, however, who avoid having breakfast simply because they are not hungry. There are other people who do not have breakfast because this makes their appetite even stronger and they tend to have more food through the day.

If you are not a fan of breakfasts as well, then you may like brunches instead. Family gatherings happen mostly at the weekends and are often brunches. Some families even have it as a tradition to have a Sunday brunch together. It is definitely a good reason to have a family gathering.

And if you want to prepare something new and interesting apart from the usual dishes you and your family have for brunch, then we are here to give you a couple of ideas for your brunch meals. Check them out!

#1 Ham and Eggs Bake

The first recipe is quite easy to prepare, but you will still need some time to prepare it and some extra ingredients which you may not have at home, like dough and ham. Here is what you need to do:

Ingredients:

1 can of pre-made biscuits

8 eggs

2 yolks

1 ½ cups of milk

1 cup of ham

1 tablespoon of lemon juice

¼ cup of chives

4 tablespoons of hot butter

1 teaspoon of salt

1 teaspoon of pepper

a pinch of cayenne powder (optional)

Directions:

Step 1

First you need to get a big bowl and to mix in it the 8 eggs with both yolks and whites. Then pour the milk into the bowl and season the mixture with the salt and pepper.

Then chop the chives if you have not and add it into the bowl with the rest of the ingredients. Whisk the mixture well until it does not turn into a homogeneous one. You need to have in mind that the eggs should be really well whisked.

Step 2

Now you need to get the can of biscuits and to open it. Cut the round biscuit pieces into cubes. You do not have to be absolutely precise, but it is still good to be 2-3 cm big ones. Then put the pieces into a deep baking tin and spread them equally on the bottom of it.

Step 3

Then cut the ham into pieces which need to be more or less as big as the biscuit pieces. Then add them into the tin with the biscuits and spread them equally as well. And then you simply need to pour the egg and chives mixture over the other two ingredients in the tin.

Step 4

Bake the dish in the oven for 35 minutes at 180 0C. And while you are waiting for the bake to be ready, you can move on to preparing the sauce for the bake.

Step 5

You will need a blender, but if you do not have one a simple mixer will do the job. Put the two egg yolks in the blender, add the tablespoon of lemon juice, season them with ½ teaspoon of salt and a pinch of cayenne pepper, which is optional, of course, and blend them together for half a minute or so.

Then gradually pour the melted hot butter into the blender and continue blending the mixture for half a minute more. Then the sauce for the bake will be ready. It will have a fresh yellow color because if the color of the yolks and the butter.

Step 6

When the bake is ready you need to cut it into pieces and then to serve each piece with a spoonful of the sauce spread on top of it. You can leave it for a minute or so to get absorbed a little into the bake. You can also sprinkle it with some fresh chives and voila, the dish will be ready to be served!

#2 Potato Brunch Dish

The next recipe is quite fast and easy to prepare and it is perfect for last-minute brunch dish, like when unexpected guests arrive. So, here is what you need to do!

Ingredients:

2 potatoes

½ onion

3 straps of cooked bacon

¼ cup of green onions

1 teaspoon of salt

½ teaspoon of black pepper

1 tablespoon of taco seasoning

1 tablespoon of olive oil

Directions:

Step 1

First you need to wash the potatoes well. Then dice them into medium-size pieces. There is no need to peel them, the dish will be much better when it is with the peel on. Then chop the onions thinly.

Step 2

Get a deep baking tin and mix in it the diced potatoes and the chopped onion. Then chop the cooked bacon and add it as well into the baking tin. If you are wondering how to cook the bacon, you can simply bake it on both sides for a couple of minutes.

Step 3

Then you need to add the green onion into the tin by chopping it nicely beforehand. Season the mixture with the salt and the pepper and then sprinkle the taco seasoning as well. Lastly you need to pour the olive oil on top of the other ingredients and then mix everything carefully. Make sure the mixture is evenly seasoned.

Step 4

When all the ingredients are mixed together you need to bake it in the oven for half an hour at 220 0C. When it is ready, you can serve the dish. You can sprinkle some fresh green onions on top if you want.
