A lot of people already dream of the hot summer days, but there are still a couple more months to go before we can head to the beach. This does not mean that we cannot enjoy the spring days. Spring is the season that has it all – sunny days, windy days, cool days, reviving nature and a lot of fresh fruits and vegetables.
When it comes to food, this season has a lot to offer, which means that it is the best time to start eating healthily. To celebrate this lovely season, we have prepared 2 spring recipes that are very delicious, but not only this. They can teach you how to use the products nature gives you and to make it healthy and nutritious. Here are 2 spring rolls recipes for the spring!
Chicken spring rolls
2 chicken breasts
1 cup mushrooms
1 cup of cabbage
1 cup carrots
¼ cup chopped onion
2 cloves of garlic
1 tablespoon of ginger
5 tablespoons of cooking oil or olive oil
egg roll wrappers
Get a cooking pot and heat the cooking oil in it a little. Then add the garlic cloves. Do not forget to slice them, or if you prefer you could chop them. It depends whether you like garlic or not. Then add the ginger and stir the ingredients for about a minute or less.
Now add the chicken breasts. You should cut them in small pieces first. Some people prefer to chop them, but I personally recommend cutting them in small slices. This way it would be easier to roll them in later. Season the chicken breast with salt and black pepper to your own taste and again mix all the ingredients in the pot.
Now add the mushrooms. You could cut them the way you want. Stir the ingredients before you add the cabbage as well. Then add the onions and the carrots and mix everything well. Stir them for about a minute and then remove the pot from the hot plate.
Now get the egg roll wrappers and put a spoonful of the chicken breast mixture in one of the corners of the wrapper. Make sure it has all the ingredients from the mixture. Then roll it inside the egg wrapper.
Once you reach the final corner of the square roll wrapper apply some egg wash to seal it. Repeat the same step with the rest of the egg wrappers until you are out of stuffing.
The final thing you need to do is to cook the rolls. Heat cooking oil in the same pot you cooked the chicken breast stuffing. Deep-fry them until they turn dark brownish. Remove them from the oil and serve them with barbeque sauce in a separate bowl.
Caesar salad spring rolls
This recipe is for those of you who adore Caesar salads in every one of its variations. Another advantage is that this recipe is considered healthier than the previous one, because there is no deep-frying included. But enough with the clues, here is how to make these healthy Caesar salad spring rolls!
Ingredients for 1 spring roll:
1 big piece of grilled chicken
a handful of croutons
a handful of Parmigiano-Reggiano
4 pieces of romaine
1 rice paper
some warm water
First, you need to get a deep plate and to pour some warm water in it. Then put the rice paper in it and leave it there for about a minute to absorb some of the water and to become easier for use.
Once the rice paper is ready, remove it from the water. Put it on your table and start putting the rest of the ingredients on it. First put the pieces of romaine. Then add the handful of Parmigiano-Reggiano around and on top of the romaine.
Then add the croutons in the same manner you added the Parmigiano-Reggiano – a bit scattered around. Finally, you need to add the big piece of grilled chicken. Put it somewhere in the middle of the rice roll.
All that is left to do now is to roll up the rice paper leaving all the ingredients equally distributed in it. Then cut the roll in two equal pieces exposing the stuffing of the roll. Finally, serve the rolls with a bowl of garlic sauce, or if you do not like it, you could serve it with some sour cream sauce.
